The quiet counters of Jakarta
Jakarta rewards people who like to sit still. Its best rooms aren't the loudest — they're the counters where a chef works in silence and expects the same of you.
August is the purest example: eight seats, no menu, no photographs after the first course. When the night is over I'll walk to Hakumori, push the right bookshelf, and let a bartender measure a stirred drink to the gram.
Two rooms, one mood: restraint as luxury.
